The Centonze Nero d'Avola, has a very intense ruby red color with violet reflections, a soft but powerful flavor with silky tannins and a fruity finish. Easy to detect are the intense fruity notes of plum, cherry and blueberry with hints of cloves, black pepper and licorice. The harvest takes place at the end of September and the vinification, by destemming and fermentation with the skins, in 6/8 days at 23 ° / 25 ° C. in stainless steel. It goes well with first courses, risottos, red meats, lamb and powerful cheeses. Due to its structure and intense aroma it goes perfectly with  "Mezze Maniche alla Norma" with aubergines and salted ricotta.

The recipe for our Wine Vinegar and Grape Sugar has only one secret, time. Aging takes place in old family barrels using natural ingredients and only the best grapes. Our vinegar is a sincere ally for health, fat-free, low in alcohol and gluten-free. Obtained with the natural fermentation system, it has a ruby red color and a penetrating but delicate smell. "Sugo alla Norma" is a condiment from the city of Catania. This sauce brings to the table the flavors and aromas of Sicily thanks to the strictly selected ingredients held together by our Centonze Extra Virgin Olive Oil. It is a very simple dish that will give your recipes a touch of Sicily. Its flavor has seduced anyone who has been on the island or who has tasted it around the world. Ready to use, just heat it up bain-marie for a few minutes and mix it in a pan with our "Mezze Maniche" after draining them al dente.

The Centonze Rosato has a pink color, an enveloping flavor, savory with a fresh acidity, therefore rightly tannic.  Easy to detect are the intense spicy notes of blackberry, wild berries and strawberry. The harvest takes place in early September and the vinification, by de-stemming and fermentation with the skins, in 6/8 days at 23 ° / 25 ° C. in stainless steel. Perfect as an aperitif, it excels on seafood, shellfish and all fish in general but especially when cooked on the grill.Try it with the "Busiate alla Bottarga" and with the "Tuna Tartare" with salt from Trapani.

These crunchy and spicy hot biscuits, with a lot of Centonze Extra Virgin Olive Oil, are still made today as it was done by nuns in Sicilian convents since 1700. They are a perfect snack to take with you everywhere but also excellent to accompany our oven baked black olives, cheeses, pickles and all cured meats with a delicate flavor. Kneaded by hand, they are cooked in the oven with only olive wood and therefore as soon as they are ready they give off an intoxicating aroma and scent. Our almonds are harvested between August and September, dried for 3-4 days in the sun and once dry stored in our warehouses at a controlled temperature. The Tuono almond is less rich in oil than other varieties and its seed is particularly large.

Nocellara del Belice is the only Italian olive among the over 550 varieties that stands out for two PDO awards, from oil and from table, it is characterized by an excellent pulp / stone ratio and a moderate sugar content. The drupe resembles a walnut and sometimes reaches very voluminous dimensions, its color is intense green and changes to vinous red as it matures. The crunchy pulp and the slightly sweet and sour taste make it a real queen among table cultivars. Hand picked in early October and processed the same day following the Castelvetrano Method, which has made them famous all over the world, they are the perfect aperitif!
