The recipe for our Wine Vinegar and Grape Sugar has only one secret, time. Aging takes place in old family barrels using natural ingredients and only the best grapes. Our vinegar is a sincere ally for health, fat-free, low in alcohol and gluten-free. Obtained with the natural fermentation system, it has a ruby red color and a penetrating but delicate smell. The taste is soft but full-bodied. For true admirers.

The Centonze Nero d'Avola, has a very intense ruby red color with violet reflections, a soft but powerful flavor with silky tannins and a fruity finish. Easy to detect are the intense fruity notes of plum, cherry and blueberry with hints of cloves, black pepper and licorice. The harvest takes place at the end of September and the vinification, by destemming and fermentation with the skins, in 6/8 days at 23 ° / 25 ° C. in stainless steel. It goes well with first courses, risottos, red meats, lamb and powerful cheeses. Due to its structure and intense aroma it goes perfectly with  "Mezze Maniche alla Norma" with aubergines and salted ricotta.

Our Sicilian Ancient Wheat "Busiate" of the Tumminìa variety are naturally wholemeal. They are bronze drawn, which makes this pasta rough and porous and therefore perfect for mixing with any ingredient. The wheat is ground slowly with stone in order to avoid the loss of its precious nutrients. The manual and irregular cut characterizes the craftsmanship. The slow drying at low temperature allows to keep the nutritional properties unaltered. The Low gluten content, very low glycemic index and high digestibility make it a healthy and wholemeal food.

Our green olive paté is a ready-to-use spreadable cream with a delicate olive flavor. Ideal for making bruschetta and delicious appetizers but also perfect for flavoring tasty roasts. It's a concentrate of green Nocellara del Belice olives with the sole addition of Centonze EVO oil. It is produced by using only the pulp of the olives selected and processed within 24 hours of harvesting which takes place only during the first weeks of October. The result is a genuine and simple product, ideal for vegetarians and vegans.

Our Black Olives with Dark Chocolate are a real excellence. Born from the desire to tell our territory (strongly dedicated to olive growing) through Chocolate, they are the result of years of experimentation and innovation The olives are pitted and subjected to a particular process before encountering 70% dark chocolate.The result is a gluten-free product perfect to accompany any distillate, perhaps together with a quality cigar.

From an old family recipe comes our "amaro" made from olive leaves. Excellent as a digestive, it can be drunk cold at the end of a meal but for its particular properties it can also be taken hot as a punch, together with an orange or lemon peel. It is also a perfect ingredient for the preparation of cocktails and drinks. By mixing it with tonic water, ice and a slice of lemon you will prepare a pleasant refreshing drink excellent as an aperitif. It only takes a few sips to be transported into a unique taste experience.

Our "Gelo di Nero d'Avola" can be used as an appetizer paired with all cheeses or as an ingredient for the preparation of delicious desserts. In the "Gelo di Nero d'Avola" is the flavor and aroma of the wine from which it is produced.  The preparation is completely artisanal, the wine is brought to the boil very quickly in order to concentrate and enhance the aromas retained in the grapes in the best possible way. The taste gives us hints of berry, cherry and plum.

Our black olive pate is a ready-to-use spreadable cream with a strong flavor of ripe olive.

Ideal for preparing bruschetta and delicious appetizers but also perfect for flavoring tasty roasts. It is a concentrate of ripe Nocellara del Belice olives with the sole addition of Centonze EVO oil.

It is produced using only the pulp of the olives selected and processed within 24 hours of harvesting that usually takes place at the end of the oil campaign when the drupes are ripe. The result is a genuine and simple product ideal for vegetarians and vegans.

The Centonze Rosato has a pink color, an enveloping flavor, savory with a fresh acidity, therefore rightly tannic.  Easy to detect are the intense spicy notes of blackberry, wild berries and strawberry. The harvest takes place in early September and the vinification, by de-stemming and fermentation with the skins, in 6/8 days at 23 ° / 25 ° C. in stainless steel. Perfect as an aperitif, it excels on seafood, shellfish and all fish in general but especially when cooked on the grill.Try it with the "Busiate alla Bottarga" and with the "Tuna Tartare" with salt from Trapani.

Our almonds are harvested between August and September, dried for 3-4 days in the sun and once dry stored in our warehouses at a controlled temperature. The Tuono almond is less rich in oil than other varieties and its seed is particularly large.

The Aubergines "Caponata" is the masterpiece of the Sicilian cuisine, it alone contains its history, richness and aromas. It is prepared according to tradition, combining a variety of vegetables fried in Centonze Extra Virgin Olive Oil with many simple ingredients that, wisely dosed, capture the unmistakable smells and flavors of Sicily.Ready to use, slightly heated to taste, it is an ideal appetizer but at the same time a vegetarian side dish very welcome to anyone who loves the taste of sweet and sour.

Nocellara del Belice is the only Italian olive among the over 550 varieties that stands out for two PDO awards, from oil and from table, it is characterized by an excellent pulp / stone ratio and a moderate sugar content. The drupe resembles a walnut and sometimes reaches very voluminous dimensions, its color is intense green and changes to vinous red as it matures. The crunchy pulp and the slightly sweet and sour taste make it a real queen among table cultivars. Hand picked in early October and processed the same day following the Castelvetrano Method, which has made them famous all over the world, they are the perfect aperitif!
