The Aubergines "Caponata" is the masterpiece of the Sicilian cuisine, it alone contains its history, richness and aromas. Our "Gelo di Nero d'Avola" can be used as an appetizer paired with all cheeses or as an ingredient for the preparation of delicious desserts. In the "Gelo di Nero d'Avola" is the flavor and aroma of the wine from which it is produced.  The preparation is completely artisanal, the wine is brought to the boil very quickly in order to concentrate and enhance the aromas retained in the grapes in the best possible way. The taste gives us hints of berry, cherry and plum.

Our almonds are harvested between August and September, dried for 3-4 days in the sun and once dry stored in our warehouses at a controlled temperature. The Tuono almond is less rich in oil than other varieties and its seed is particularly large.

Our vinegar is a sincere ally for health, fat-free, low in alcohol and gluten-free. Obtained with the natural fermentation system, it has a ruby red color and a penetrating but delicate smell. The taste is soft but full-bodied. For true admirers.

The Centonze Nero d'Avola, has a very intense ruby red color with violet reflections, a soft but powerful flavor with silky tannins and a fruity finish. Easy to detect are the intense fruity notes of plum, cherry and blueberry with hints of cloves, black pepper and licorice. The harvest takes place at the end of September and the vinification, by destemming and fermentation with the skins, in 6/8 days at 23 ° / 25 ° C. in stainless steel. It goes well with first courses, risottos, red meats, lamb and powerful cheeses. Due to its structure and intense aroma it goes perfectly with  "Mezze Maniche alla Norma" with aubergines and salted ricotta.
